The only other difference is that any new achievements will not update until you play in on-line mode again, but a few minutes is enough for Steam to update your achievements they are not lost. then you can disconnect from the net and play off-line any time you like. You do have to launch the game in on-line mode to select off-line mode the first time, though. I just prefer off-line mode to avoid stealth updates and because I don't see the point of paying to be on-line for a single-player game. You can still play in On-Line mode, of course, as Steam is required to run Skyrim for the DRM etc, whether on or off-line. So I just start Steam in off-line mode first and then use the SKSE launcher to launch the game. If you use the SKSE launcher without starting Steam first, Steam will launch and the Vanilla Skyrim splash screen will come up. You cannot play Skyrim without Steam running.
